If anyone could make cheese complicated, it’s the French. Not only have they invented enough varieties for you to eat a different fromage every day for a year (and then some), they also have strict rules about how each fromage should be cut – and doing it wrongly is a big social no-no. But before you start to panic and consider the plateau de fromage to be more like a game of Russian roulette than a cheesy delight, take this quiz and see where you’re going wrong. Or right!
I would’ve done terribly at this quiz had I not made it, so I’ll give you a hint on how to work out the right answers. The guiding principle behind correct coupage (as l’académie française aren’t calling it) is that each serving should have equal proportions of rind to good stuff. Think of it like a pizza: no one should end up with just crust.
